Instant Dhokala

Dhokala is a vegetarian snack originating from Gujarat. It is traditionally made with fermented batter using besan. This recipe avoids waiting for batter to be fermented by making use of fruit salt and making it in micro wave. So enjoy this quick and easy dhokala, garnish it with mustar, jeera and turmeric tempering as well as fresh coconut and coriander

Ingredients

For Dhokala

  • Besan – 1 cup
  • Curd – 1/2 cup
  • Green Chilies – 5 nos
  • Ginger – 1 inch piece
  • Turmeric powder – 1/2 tsp
  • Hing (Asafoetida) – 1/4 tsp
  • Sugar – 1 tsp
  • Salt – 1 tsp
  • Fruit salt – 1.5 tsp (I used Eno Fruit Salt)
  • Water – 2 tsp
  • Oil – 1 tsp (for greasing)

For Tempering and Garnish

  • Oil – 1 tbsp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Hing (Asafoetida) – 1/4 tsp
  • Curry leave – 8-10 nos
  • Fresh coconut (shredded) – 2 tbsp
  • Coriander (finely chopped) – 1 tbsp

Directions

For Dhokala

  1. In a blender, grind green chilies and ginger coarsely
  2. In a medium bowl, take besan, ground chill-ginger, curd, hing, turmeric powder, sugar and salt. Mix well with either fork or whisk
  3. Add fruit salt on top. Add water on the fruit salt. There will be effervescence
  4. Mix everything well and keep aside
  5. Grease a microwave safe bowl of suitable size such that the above batter will cover only half of the bowl
  6. Pour the prepared batter in greased bowl
  7. Keep in microwave for 3.5 minutes
  8. Fluffy dhokala will be ready

For Tempering and Garnish

  1. While, dhokala is in cooking, keep a small skillet to make tempering on medium heat
  2. Once oil is warm, add mustard seeds, cumin seeds, hing and turmeric powder. Add curry leaves and take it away from heat. Mix well with spoon
  3. Pour this tempering evenly on cooked dhokala
  4. Garnish with fresh coconut and coriander
  5. Dhokala can be enjoyed for breakfast, during main course or even as a snack
