Coffee cake is a light cake which is usually relished while enjoying the cup of hot and strong coffee. Streusel is a crumbly topping of flour, butter and sugar. One can also add any nuts like walnuts, almonds, pecans etc. Streusel provides a nice crunch while devouring the light, fluffy cake. I have used pecan in streusel and flavored lightly with cinnamon.
Plum coffee cake with Pecan Cinnamon Streusel
A light, fluffy and moist cake with baked fresh plums topped with pecan, cinnamon streusel
Ingredients
For Streusel
- Flour (maida) – 40 gm
- Unsalted butter – 30 gm (at room temperature)
- Brown sugar – 35 gm
- Cinnamon powder – 1/4 tsp
- Salt – 1/4 tsp
- Roughly chopped pecan – 80 gm
For Plum Cake
- Flour (maida) – 160 gm
- Baking powder – 1 tsp
- Baking soda – 1/2 tsp
- Cinnamon powder – 1/2 tsp
- Salt – 1/2 tsp
- Granulated sugar – 150 gm
- Unsalted butter – 90 gm (at room temperature)
- Eggs – 2 (at room temperature)
- Plain yogurt (thick curd) – 80 gm
- Vanilla essence – 1 tsp
- Dark Plums – 4 no (cut into 8 wedges each)
Directions
- Pre-heat oven at 190 degrees Celsius. Line 8″x 6″ pan with parchment paper
For Streusel
- In a small bowl, combine flour, brown sugar, cinnamon, salt and chopped pecans.
- Melt the butter, pour over flour mixture
- Combine the mixture well with the help of fork so that large crumbs are formed.
- Keep aside
For Cake
- In a medium bowl combine flour, baking powder, baking soda, cinnamon powder and salt.
- In another medium / large bowl, cream the sugar and butter with the help of hand mixer until it is light and creamy
- Break the egg and add to the sugar-butter mixture, one at a time. Mix it well with the hand mixer after each addition
- Add vanilla essence and yogurt. Combine well for 2-3 minutes at high speed
- Add dry ingredients mixture and mix it well at low temperature until just incorporated
- Spread the batter evenly in the prepared pan. Flatten the top of the batter
- Arrange the plum wedges on top of batter with purple side up
- Spread the streusel mixture evenly over the cake covering entire top surface
- Bake in oven for around 45 minutes or until toothpick inserted at the center of cake comes out clean
- Allow it to cool for 10-15 minutes
- Remove from the pan and allow it to cool further on wire rack for 20 minutes
- Cut into square pieces and serve with hot coffee
